"THE" chili con carne recipe.

No tomatos, no bell peppers, no chocolate, no beans, no fillers or other gormet garbage.  If it contains any of the mentioned items it AIN'T chili con carne, it's something else, so please don't try to call it chili.

OK.....I'll make one concession, you may add pinto beans if you feel you have to. But anyone who adds kidney beans will be hunted down and flogged.

3 lbs.     lean chuck, or round steak chopped fine  (you can substitute ground beef)
4 Tbsp.    lard
1 large.     yellow onion
2 cloves   garlic, minced
1 1/2 tsp. ground cumin
6          Jalapeno chiles, stems and seeds removed
1/4 cup    crushed red chile flakes
3          dried Ancho peppers, stems, seeds removed;cut into 1 inch
pieces
1 (10 1/2 oz.)can condensed beef broth
1 can             beer(use broth can) Or I suppose you could use water. (whimps)
1/2 tsp. dried Mexican oregano (cilantro), crushed
1/2 tsp. salt
1 tsp.   white pepper

If you feel this is a little too tame, add more red chile flakes or jalapenos.

Place the peppers, garlic, and onions in a food processor until chopped
fine. Add the meat, salt and white pepper to the processor and course chop
meat. Heat up the lard in a large sauce pan or skillet and cook until the
meat is brown. In a soup pot add beef broth, water, cumin, and Mexican
oregano. Bring to boiling; reduce heat. Add the meat mixture slowly.
Simmer uncovered, for 1 1/2 hours or until the meat is tender, stirring
occasionally to keep from sticking. Makes: 6 servings

Serve with cold beer and a towel to dry the sweat off your forhead.

Lard!  Shocked lol


I'm going to give this recipe to my son to make, he is a hot chili kind of guy. In fact he bought a pepper plant that is suppose to have the hottest peppers in the world on it. I won't be tryin it..

Lard is our friend. 

He might be planting a scotch bonnet, they are so hot only a fire eater can stomach them.

robth! You know chili!
We call those scotch bonnets habaneros.
You can't make good tortillas without lard, pie crust either.

Despite robth's forgiving nature, even pinto beans are a defilement of chili, serve 'em on the side.

It is not a habernero as they grow those too..Also I use crisco for my pie crust, and I must say, I make a mean pie..Wink Smiley

Would it be the jolokia?
They are an Indian pepper said to be even hotter than habanero,
though at that point I would just spray mace right into my mouth.  Grin

If your son likes very hot sauce, see if you can find Calypso sauce. I get it at a import grocery that sells Caribbean food. Hottest sauce I know.

I agree about the mace! lol..When they make sauce, they make two. One for them, and one for me and the kids..Cheesy I'm going there for dinner today, I'm going to try and remember to ask.
