I am making roast beef and gravy, mashed potatoes, butterbeans, cabbage, homemade Three Ingredient Biscuits and ice cream for dessert.

If anyone wants either of the above recipes, I'll do my best to inform you of how to...

Here it is, Josie.

THREE INGREDIENT BISCUITS

Prep Time:      10 Min
Cook Time:      25 Min

Ingredients
2 c      self rising flour
1 stk      butter, melted
1      (8 ounce) container sour cream

Directions
1    Preheat oven to 350 degrees. Lightly grease (I use Baker's Joy) a 12 muffin tin tray.
2    Mix ingredients together just until blended. Using an Ice Cream Scooper, fill the scooper full of batter and place into muffin tins, filling about half full.
3    Bake for approximately 25 minutes or til lightly brown.

For tomorrow's lunch, we are having good ole Southern Fried Chicken, fried squash, 7 layer salad, yams and fresh corn-on-the-cob with Southern Corn Bread.

Harry, you want an invite? If so, come on over for midday. Cheesy

Yum! Did you do the cooking, Bert? If so, do you want to share one of the recipes here with us? Puttanesca or shellfish soup?

These muffin type biscuits are light and fluffy and a tad crispy on the outside, but with a little melted butter brushed atop them, they are really really good, imo.

You may use this butter topping recipe on your hot biscuits

MELTED BUTTER TOPPING

2 Tbsp. of melted butter
1/4 - 1/8th tsp garlic powder
1/4 tsp parsley flakes
Parmesan Cheese to taste (optional)

mix together and brush atop piping hot biscuits; sprinkle with optional Parmesan Cheese.

PS... I forgot to mention these muffin type biscuits are done by 27 minutes of cook time although they are not golden brown in color. If you want their hue to have a gold brown look, turn on your broiler and allow the tops to brown a minute. Be careful because you may easily burn them up if you walk away while browning. I like them as is.
