In the past couple years I picked up a new hobby. I smoke about 10-15 pounds of meat each month.

Anyone else?

Nah.... too much of a smokey flavor for me

Fresh (don't use that Pacific crap) tuna from the gulf cut into 1.5 inch cubes for about 2 hours over shagbark hickory at 150 to 175 degrees.

Leftovers are great as tuna salad, or tuna dip.

actually, I've never cooked a possum in any way - eaten a couple, but never cooked or smoked one.
